Guacamole Soup straight from the grove
Growing up our family had a huge avocado ranch. We enjoyed every variation and recipe of avocados you can imagine. Mom Souza created this amazing Guacamole Soup Recipe in the 1980s. It was popular and even published in a local fundraising cookbook. Let’s get started on the Souza’s Guacamole Soup Recipe.
- 4 Medium to Large Hass Avocados
- 1 cup Vegetable Broth
- 1/2 Red Bell Pepper Diced
- 1/4 Diced Jalapeno Pepper (without seeds)
- 1/2 Lime Juiced
- Sea Salt to taste
- 1/2 tsp Garlic Powder
- 1/2 tsp Cumin Powder
- Pinch Cayenne Pepper
- 2 Tbsp Sour Cream
- Sprig of Cilantro chopped
- 1/2 Cup Fully Cooked Chopped Chicken or Turkey Breast (optional)
Combine everything except the vegetable broth, sour cream, chicken, red bell pepper and cilantro into a food processor or powerful blender. Slowly add broth until consistency is thick or you achieve your choice of consistency. Use less broth for a thicker soup. Pour into serving bowl and stir in chopped cooked chicken.
Garnish with cilantro, small dollops of sour cream and diced red bell pepper. Serve and enjoy at room temperature.
